Resep soto tangkar Betawi adalah salah satu dari sekian banyak kekayaan kuliner dari kota Jakarta yang tetap lestari hingga kini. Menariknya, masakan ini tidak selalu eksklusif harus ditemukan di kedai-kedai khusus makanan Betawi. Dari level warungan atau gerobakan, hingga restoran dan hotel, hidangan yang satu ini punya banyak penggemar.

Konon dahulunya kaum kolonial Belanda hanya bersantap bagian daging has saja sehingga bagian daging sapi lainnya tidak dimanfaatkan. Namun itu bukan berarti halangan bagi warga Betawi tempo dulu dengan berkreasi di dapur hingga lahirlah resep soto tangkar iga sapi yang nikmat dan menyegarkan ini. Proses memasaknya memang membutuhkan waktu ekstra, yaitu agar daging iga menjadi empuk dan kaldu semakin meresap rasanya.

Betul, kamu tidak salah dengar, bagian daging iga sapi yang kini dibanderol mahal dahulunya tidak dikonsumsi oleh orang Belanda. Ya, kurang lebih mirip mirip bagian dalam perut ikan tuna yang dahulunya tidak dimanfaatkan oleh orang Jepang. Cara membuat

Merebus daging iga sapi untuk resep soto tangkar.

Rebus iga sapi hingga mendidih, biarkan api tetap menyala. Sisihkan.

Menumis bumbu halus untuk resep soto tangkar.

Panaskan minyak, tumis bumbu halus, masukkan lengkuas, daun salam, daun jeruk, dan serai, aduk hingga harum. Angkat.

Membuat kaldu untuk resep soto tangkar.

Masukkan ke dalam kaldu iga. Tambahkan santan, susu, dan Royco Kaldu Sapi. Masak hingga iga empuk. Angkat.
