Sarapan andalan orang Indonesia begitu banyak jenisnya, tapi ada beberapa di antaranya yang paling populer. Resep lontong sayur enak ini jelas adalah salah satunya. Selain mengenyangkan, hidangan ini bisa divariasikan formulanya dalam berbagai jenis. Kali ini, aku ingin membagikan versi sehatnya dan ditambahkan satu kejutan lainnya!
Adalah udang yang sengaja aku sisipkan di resep lontong sayur spesial ini agar lebih meriah dari biasanya. Cita rasanya memang cocok dipadukan dengan berbagai macam protein. Secara tradisional, dalam lontong sayur biasanya terdapat telur, tahu, ataupun ayam. Namun orang Padang dengan hebatnya menambahkan rendang. Begitupun dengan seafood terkhusus udang, siapa bilang lontong sayur tidak cocok dengannya?
Agar lebih sehat, aku gantikan santan dengan susu rendah lemak. Dengan bumbu dan bahan yang pas, rasa kuahnya tidak akan kalah kok dengan yang biasanya. Bahkan kamu bisa menikmatinya dengan perasaan lega karena lebih menyehatkan bukan?

Cara membuat

Panaskan minyak di atas api sedang dan tumis bumbu halus.
Tambahkan lengkuas, serai, daun salam, lalu tumis hingga harum.

Masukkan udang, nangka muda, dan labu, lalu masak sampai empuk.

Masukkan kacang panjang, aduk rata. Tuangkan santan, aduk hingga mendidih.

Tambahkan Bango Kecap Manis dan garam. Masak hingga matang dan angkat. Sajikan.
