Potong kentang memanjang seperti ukuran kentang goreng beku ukuran lebar 1 cm. Cuci kentang beberapa kali hingga benar-benar bersih.

Didihkan air, rebus kentang dalam air yg sudah mendidih bersama bawang putih dan Royco Kaldu Jamur selama 4 menit. Angkat. Masukkan ke dalam air es. Rendam hingga kentang tidak panas. Tiriskan.

Masukkan kentang ke dalam freezer selama 30 menit.

Panaskan minyak di atas api sedang, goreng kentang sebentar atau hingga buihnya hilang. Angkat dan tiriskan. Bekukan kembali dalam freezer. (Pada tahap ini kentang bisa disimpan dalam freezer setelah kentang tidak panas)

Panaskan minyak di atas api besar, goreng kembali kentang tadi hingga cokelat keemasan. Angkat.

Selagi panas, taburi kentang dengan keju parmesan. Sajikan bersama taburan peterseli cincang.
