Taoco merupakan bumbu fermentasi kedelai yang terkenal di beberapa wilayah Indonesia. Memiliki paduan rasa manis dan asam, taoco bisa dipadukan dengan berbagai masakan, tak terkecuali ayam panggang. Biasanya, setiap daerah memiliki ciri khas rasa dan bau taoco. Misalnya taoco khas Cianjur berbeda dengan taoco khas Riau.

Agar rasa lebih enak, pastikan untuk memilih taoco yang berkualitas. Biasanya, taoco yang masih segar memiliki warna cokelat kemerahan. Wanginya pun khas. Perhatikan juga tanggal kadaluarsanya ketika membeli. Simpan taoco dalam wadah kedap udara untuk menjaga kualitasnya. Sebenarnya taoco cukup tahan lama disimpan meski botolnya sudah dibuka, tapi sebaiknya disimpan di lemari pendingin.

Cara membuat

Ayam yang telah dimarinasi disimpan dalam kulkas.

Aduk rata semua bahan bumbu perendam. Lumuri daging ayam dengan bumbu hingga merata. Diamkan dalam kulkas selama 2 jam.

Seseorang tengah menyalakan oven.

Panaskan oven dengan suhu 180 C.

Ayam tengah dipanggang dalam oven.

Masukkan daging ayam ke dalam pinggan tahan panas atau loyang yang sudah diolesi minyak. Panggang selama 30 menit. Keluarkan. Sisihkan.

Menyiapkan saus taoco.

Panaskan minyak, tumis bawang putih hingga harum. Masukkan sisa semua bahan termasuk Bango Kecap Manis. Masak sambil diaduk hingga mendidih dan mengental. Angkat.

Memanggang ayam.

Panaskan wajan grill yang sudah diolesi minyak, panggang ayam dengan bagian kulit menghadap ke wajan. Masak bagian kulit agak garing sambil diolesi bumbu ke seluruh permukaannya. Angkat.

Ayam panggang taoco disajikan di atas meja makan.
