Selain Gudeg Nangka, Oseng-Oseng Mercon, dan Bakmi Jawa, masakan Sate Klatak tak boleh terlupakan dari daftar kuliner Yogyakarta yang wajib coba. Daerah Imogiri di Yogyakarta merupakan destinasi tepat kalau bicara soal warung sate kambing. Ciri khasnya sate di sini adalah potongan daging ditusukkan ke dalam tusuk besi dari jeruji sepeda. Di sini berjejer kedai-kedai penjual sate klatak.

Warung sate klatak Pak Pong, Pak Bari, Pak Jono, dan Pak Jupaini adalah beberapa nama yang terkenal di sana. Berbahan utama daging kambing, ada beberapa tips yang wajib kamu ketahui saat akan mengolah daging kambing supaya daging jadi lebih empuk dan bebas bau prengus.

Kalau ingin membuatnya di rumah, kamu bisa menggunakan tusuk sate berbahan stainless steel. Ukurannya bermacam-macam dan banyak dijual di toko alat dapur. Untuk proses pembuatan kuah gulai, kamu juga bisa menggunakan 100-200 gram daging kambing bagian yang sama. Tujuannya agar lebih praktis dalam berbelanja. Selain itu aku sengaja menggunakan Bango Bumbu Kuliner Nusantara Opor Ayam Khas Cepu dalam racikan kuah gulai supaya memasak jadi lebih praktis dan bebas ribet.

Lumuri daging kambing dengan bawang putih, garam, dan air perasan jeruk nipis secara merata. Diamkan selama 40 menit. Sisihkan.

Kuah gulai: Rebus tulang kambing bersama semua bahan kuah gulai kambing termasuk Bango Bumbu Kuliner Nusantara Opor Ayam Khas Cepu hingga mendidih. Kecilkan api. Masak hingga kuah meresap. Angkat. Sisihkan.

Ambil 1 tusuk satai besi, tusukkan daging kambing ke dalam tusuk satai. Ulangi proses serupa pada sisa bahan.
