Penggemar gurame bakar biasanya menyukai versi yang menggunakan sambal kecap. Selain itu, biasanya ia dipadukan dengan sambal mangga, sambal bawang, atau sambal terasi. Nah, kali ini ada yang seru nih! Kita coba padankan dengan sambal colo-colo khas Indonesia Timur!

Berasal dari Maluku dan mirip sekali dengan sambal dabu-dabu, sambal ini terdiri dari potongan kecil cabai rawit, bawang merah, tomat, dan diberi perasan air jeruk nipis. Rasanya menjadi segar dan mantap!

Sebelum memasak gurame bakar ini, pilihlah gurame yang masih hidup ketimbang gurame beku atau gurame yang sudah mati. Gurame hidup yang dijual di pasar swalayan ditampung di dalam kolam kaca atau aquarium. Beberapa sumber mengatakan proses penyimpanan di dalam air bersih ini juga berguna untuk mengurangi kesan bau ‘lumpur’. Ini terjadi pada kebanyakan ikan air tawar seperti ikan mas, ikan mujair, atau ikan nila.

Untuk menambah rasa segar pada ikan air tawar, kamu bisa melumuri perasan air jeruk nipis hingga ke bagian perutnya. Ini dilakukan demi mengurangi atau bahkan menghilangkan kesan bau lumpur tersebut. Pilihlah ikan gurame yang berukuran besar yang tentu dagingnya akan lebih tebal. Di resep ini sengaja kusarankan menggunakan grill pan karena tentu kamu tak ingin repot-repot untuk menghasilkan bara api menggunakan arang dan kipas, kan?

Cara membuat

Lumuri ikan gurame dengan air jeruk nipis secara merata. Diamkan selama 15 menit. Sisihkan.

Panaskan minyak, tumis bumbu halus hingga harum dan matang.

Tuang Bango Kecap Manis, aduk rata. Angkat dan diamkan hingga tidak panas.

Lumuri ikan dengan bumbu tumis secara merata. Diamkan selama 30 menit.

Panaskan grill pan, olesi dengan sedikit minyak. Panggang ikan sambil sesekali diolesi dengan bumbu halus. Panggang hingga matang di kedua sisinya. Angkat.

Sajikan gurame bakar dengan sambal colo-colo.
