Bertandang ke Sumatra Selatan, rasanya tidak asing lagi menemukan berbagai olahan ikan patin di sana. Begitupun resep legendaris yang satu ini sebetulnya bisa kita coba sendiri di rumah. Selain mudah dan menyenangkan, resep pindang patin khas Palembang ini sederhana dibuat dan dijamin menjadikan masakan rumahan sehari-hari jadi lebih istimewa.

Bicara soal resep pindang ikan pastinya ada beragam rasa yang akrab di sana. Masakan yang cocok untuk sarapan hingga makan malam ini selalu punya tempat tersendiri di hati. Seporsi nasi hangat, sedikit basah karena kuahnya, lalu padukan dengan bermacam-macam dimensi rasa dan tekstur di dalamnya. Ada rasa ikan segar yang baru dimasak, ada rasa kuah yang pedas manis, serta rasa asam yang menyenangkan dari belimbing wuluh serta tomat.

Cara masak pindang patin pun terbilang mudah. Karena pindang patin ini menggunakan jenis ikan yang istimewa, maka cukup melumurkan dahulu perasan jeruk nipis agar ikan lebih segar dan kemudian olah bumbu-bumbu halus khas Indonesia. Lumuri potongan ikan patin dengan air jeruk nipis.

Haluskan bumbu.

Panaskan minyak di atas wajan dengan api sedang. Masukkan bumbu yang telah dihaluskan bersama serai dan daun salam. Tumis selama satu menit hingga matang.

Tambahkan gula merah, air asam jawa, Kecap Manis Bango, dan satu liter air matang. Didihkan.

Masukkan ikan patin ke dalam wajan dan tambahkan tomat serta belimbing wuluh. Masak selama kurang lebih tujuh menit di atas api kecil hingga matang.
