Salah satu provinsi dengan popularitas tertinggi untuk urusan kulinernya adalah Sulawesi Selatan. Tapi alih-alih bicara lagi soal resep coto Makassarsup konro, konro bakar, ataupun pallu basa, yuk kita coba memasak bersama jalangkote khas Makassar yang satu ini!

Daerah yang satu ini memang jagoan urusan daging sapi. Jadi, gak heran kalau jalangkote saja diisikan dengan tumisan daging sapi dan sayur. Penampilannya mirip dengan pastel goreng isi yang sering kita jumpai di tempat-tempat jajanan, hanya saja isiannya bukan kari ataupun tumisan sayur pada umumnya. Meskipun terbilang mirip, jalangkote adalah salah satu bagian dari sederetan camilan khas Makassar yang tenar. Sebut saja nama-nama populer seperti apang paranggi, gogos, barongko, hingga cangkuning.

Cara membuat

Tumisan sayuran untuk isi jalangkote tengah dimasak.

Isian: Panaskan minyak, masukkan daging sapi, wortel, kentang, dan daun bawang. Tumis hingga matang.

Menumis suun dan taoge untuk isian jalangkote.

Masukkan air, taoge, dan suun. Aduk rata.

Menambahkan telur pada adonan jalangkote.

Masukkan Royco Nasi Goreng Soto, merica, pala, dan gula pasir. Aduk rata. Angkat dan sisihkan.

Membuat adonan jalangkote dalam mangkuk besar.

Kulit jalangkote: Campur terigu dengan telur, garam, dan susu. Aduk rata. Tambahkan minyak, aduk kembali hingga adonan kalis.

Memasukkan isian jalangkote dan melipat adonannya sebelum digoreng.

Setelah adonan kalis, ambil adonan sebanyak 20 g dan bulatkan. Pipihkan adonan dan beri isian.

Jalangkote yang telah dibentuk, kini siap untuk digoreng dan tengah diletakkan dalam casserole.

Tutup dan bentuk adonan setengah lingkaran.

Jalangkote disajikan dalam besek bambu dan siap untuk dinikmati.

Goreng jalangkote hingga matang dan kecokelatan. Angkat dan tiriskan.
