Bitterballen atau yang banyak disebut juga Dutch meatballs adalah camilan yang ada di Indonesia karena pengaruh kolonial Belanda. Sejatinya bitterballen berbahan utama daging giling yang dimasak hingga empuk lalu ditambahkan roux hingga menjadi adonan yang mudah dibentuk. Roux atau pengental, umum didapat dari mentega atau margarin yang dilelehkan lalu ditambahkan dan diaduk hingga menyatu. Pada resep bitterballen kali ini, bahan pengental yang digunakan adalah roux dan kaldu sapi.

Salah satu yang khas dari bola-bola daging ini adalah sentuhan pala bubuk di dalamnya. Gorengan berbalur tepung roti ini biasanya disantap dengan cocolan mustard. Kali ini resep bitterballen a la MAHI ingin menyajikannya sedikit berbeda, yakni dengan cocolan Hellmann’s Real Mayonnaise.

Pada bitterballen versi Indonesia memang kandungan dagingnya tak sekaya dengan versi aslinya. Bawang bombay ditumis dengan margaris di atas wajan dengan spatula kayu

Panaskan minyak dan margarin, tumis bawang
bombay hingga harum.

Daging giling dan wortel yang telah dihaluskan ditumis di atas wajan dengan margarin.

Masukkan daging giling dan wortel, masak hingga daging berubah warna.

Daging giling ditumis bersama cairan terigu di atas wajan dengan spatula kayu

Masukkan tepung terigu, aduk hingga tepung
mulai menggumpal. Lalu tuang susu cair perlahan
lahan, aduk rata.

Tambahkan garam, merica, pala, keju, seledri, dan

Angkat dan dinginkan.

Adonan bitterbullen dibentuk bulat, diambil oleh satu tangan.

Ambil 1 sdm adonan, bulatkan. Baluri adonan dengan tepung panir, celup ke dalam telur, lumuri kembali dengan tepung
panir. Ulangi proses serupa pada sisa adonan.

Bitterballen yang telah digoreng diangkat memakai sendok pengiris dari wajan.

Panaskan minyak, goreng bitterballen hingga
matang dan berwarna kecokelatan.

Beberapa butir bitterballen di atas piring dengan saus mayones di sampingnya dan Royco di belakangnya.
