Ayam tuturuga, hidangan berbahan daging ayam asal Sulawesi Utara yang kini semakin digemari banyak kalangan. Bahkan popularitasnya kini mulai menyaingi ayam woku, ayam rica-rica, ataupun ayam bumbu hijau.

Masakan ayam tuturuga juga acapkali dikira sebagai opor ayam. Ini dikarenakan penampilannya yang mirip dan dibuat dari bumbu dasar kuning dan santan. Namun, terdapat bumbu-bumbu lain yang menjadi ciri khas dapur Minahasa.

Serai, daun jeruk, daun pandan, daun kemangi, dengan bumbu dasar bawang merah, bawang putih dan cabai berlimpah adalah kekuatan dapur Minahasa. Kekayaan bumbu dalam dapur Manado membuat cita rasa masakan Sulawesi Utara ini pedas dan kaya rasa dengan menggunakan bahan segar berkualitas. Tak tanggung-tanggung, biasanya jumlah bumbu berlimpah bahkan bisa berjumlah setengah dari bahan utama.

Cara membuat

Menumis bumbu halus ayam tuturuga.

Panaskan minyak, tumis bumbu halus hingga harum. Masukkan serai, daun jeruk, dan cabai rawit merah. Masak kembali hingga semua tercampur rata.

Memasak ayam tuturuga.

Masukkan potongan ayam. Masak kembali hingga ayam berubah warna. Tambahkan Royco Kaldu Ayam, aduk rata.

Menuangkan santan pada ayam tuturuga.

Masukkan air, susu rendah lemak dan santan kental, aduk. Masukkan kemangi, aduk.
